PEAR CAKE

- from Cupcake recipe
1 1/2 c. boiling water
1 c. rolled oats
1/2 c. margarine
1 c. sugar
1 c. brown sugar
3 eggs
1 tsp. vanilla
1 1/2 c. flour
1/2 tsp. each nutmeg, ginger, cloves
1/2 c. chopped nuts
2 c. cored & finely chopped pears
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
Pour water over oats and allow to sit for 1/2 hour. Cream butter and sugar;
beat in eggs and vanilla. In a large bowl, toss pears with flour, mix in soda,
salt, spices and nuts. Fold in oatmeal and egg mixture until thoroughly
blended. Pour into greased and floured baking pan. Bake at 350 degrees for
35 to 45 minutes or until wooden pick inserted near center comes out clean.
Cool. Serve with whipped topping. La Mesa, California
